Ten years ago, in 2016, I was given an assignment from Michelin to visit Kajitsu, a Japanese shōjin ryōri restaurant in Midtown. It was a one-star restaurant at the time, along with places like Uncle Boons, Betony, and Take Root — all of which I loved, all of which are closed now. What a time it was to dine out in NYC!
